Bajra / pearl millet and short grain rice Khichdi - This dish is perfect when you're sick or just want some comfort food.
As a child, I wasn't a fan of this Khichdi. My mom used to make this Khichdi only when someone was sick or had an upset stomach, so I've always associated Khichdi with being food you eat when you're sick. It's good, but it was kinda boring for me as a child.
Now as an adult, I've grown to enjoy this khichdi. It's one of those quick, comforting, and healthy meals you make when you're not in the mood to cook or if you want something healthy.
And also if you want to add millets into your diet, this is perfect. It's low in calories but high in nutrients, Diabetic friendly too 🙌 Topped with dollop of ghee, and a few spices and loads of ginger. Served with hot tomato chutney, sambar (optional), and roasted papad on the side.. trust me, this khichdi tastes amazing!!
